Florentine Roulade

 
   
Ingredients -
1 1/2 pounds Flank Steak, butterflied
2 oz herbed Goat Cheese
2 cups chopped Spinach
1/2 cup chopped Shallots
2 tbs chopped Roasted Red Peppers

 
Preparation:
Heat oven to 350°.

Place steak between 2 pieces of plastic wrap and pound to 1/2 inch thickness. In bowl, combine goat cheese, spinach, shallots, and red peppers.

Spread on steak, leaving border, press down firmly.

Roll jelly roll style, tie with string.

Place on rack set in broiler pan and coat with cooking spray.

Bake 1 hour or until done.

Let sit 10 minutes before slicing.
